A session manager is a program thats used to manage a session. A session includes the applications that are running, as well as their current status. A full session manager can preserve the session of the desktop, such as the applications and windows open, the current state of those applications, as well as their position on the screen.

Session managers are usually used to restore the desktop to the way it was when you logged out, so you don't need to open everything yourself.
