Text processing software is different from "word processing" software.
When you want to create a document in plain ASCII text (later to be turned into a formatted document that you might print out at high resolution), and you want to markup how the document is to be structured (without having to worry about specific typesetting and formatting details), you typically would use a text processing system like LaTeX to get the job done.
