Stable is the name of the Debian release (or "branch") that is the most mature and thus very appreciated for running mission critical applications.

Debian's Stable branch is currently named Sarge. Sarge is scheduled to be retired in the coming months. It will be replaced by the upcoming release named Etch. Sarge will continue to be maintained for several months while users transition/upgrade their systems to Etch.
